When I started writing my article for this morning I was going to just write about this Millennium Falcon gingerbread house. This gingerbread Millennium Falcon was of the entries in Canada’s National Gingerbread Showcase 2012. This entry was named ‘Canoe Wars’ because it was made by the Canoe Brewpub. It features Han in a sled being pulled by a tauntaun, Chewbacca, and a bunch of candy canes. The surface of the ice planet Hoth is made from shredded coconut.

What surprised us, though, is that this instance wasn’t the only one, and at least one other person has built one.  If you want to create one of these yourself this holiday, we found a video that details the process for constructing this iconic ship in entirely edible form.  Watch carefully – the main hull has a number of support bulkheads (also made of gingerbread) to keep it from collapsing of its own weight.

It’s really pretty amazing, and while there’s no how-to web site for it, you can get a pretty good idea of how it was done from watching the video.
